Ingredients

    1 lbs peeled deveined shrimp
    fresh lemon juice
    garlic- at least 5 or 6 cloves
    red pepper flakes
    salt/pepper
    .75 cup uncooked quinoa
    1/4 cup fresh basil

    feta cheese

Directions

cook quinoa separately

cook garlic and red pepper flakes in oil
add asparagus (cut into 2 inch pieces) & cook 3ish mins till tender but crisp
push asparagus to sides of pan and add shrimp (season with oregano before cooking if desired) and cook till done
add lemon juice, basil, and feta if using
add quinoa and mix all together

Serving Size: makes 6 servings
