Introduction

Cauliflower makes a great substitute for potato and is low carbohydrate and low potassium. This recipe is based from my grandmother's potato salad recipe. Best chilled for a few hours. Ingredients

    Cauliflower 1-2 whole steamed and florets chopped into large chunks
    1 medium shallot diced finely
    Celery 2 large stalks chopped
    hardboiled eggs 4 chopped
    plain greek yogurt 3 ounces
    Hellmans mayonaise approx. 6 tbsp.
    Dijon mustard 3 tsp.
    dill pickles, low sodium i medium chopped
    Dill pickle juice 2 tbsp.
    black pepper 1 tsp.
    Paprika 1 tsp.
    Parsley, fresh 1 tbsp. chopped

Tips

Cover and chill for a few hours before serving.


Directions

Steamed cauliflower until tender soft. Let cool and then cut flowerets into chunks. Dice shallot, celery, hardboiled eggs, pickle and parsley. Add to cooled cauliflower chunks. Mix, mayonaise, yogurt, mustard, pickle juice, and seasonings. Add to bowl and toss ingredients to coat vegetables.

Serving Size: makes 8 1 cup servings
