Ingredients

    1 lb lean ground beef
    2 cups salsa
    1 can chili beans (16 oz)
    3 cups tortilla chips, crushed
    2 cups sour cream
    1 can black olives, sliced
    1/2 cup green onion
    1/2 chopped fresh tomato
    1/2 cup chopped green bell pepper
    2 cups shredded cheddar cheese
    2 tbsp taco seasoning

Directions

Preheat oven to 350° F

Brown beef in a large skillet and drain off fat.
Add salsa, bell pepper, and taco seasoning, reduce heat, and allow to simmer for 20 minutes, or until the liquid is absorbed.
Stir in beans and heat through.

Spray a 9 x 13 baking dish with cooking spray.
Spread crushed tortilla chips in the bottom of the dish.
Spread beef and bean mixture over the chips.
Spread sour cream over beef and bean mixture.
Sprinkle olives, green onion, and tomato over the sour cream.
Top with the cheddar cheese.

Bake in oven for 30 minutes or until hot and bubbly.

Serving Size: Makes 8 servings
