Introduction

This pasta salad is great for a crowd. While this version isn't health-conscious, you could easily substitute whole-wheat pasta, lite dressing, reduced-fat feta and a different, lower-fat meat to reduce fat and calories. Ingredients

    12 oz. beef summer sausage, chopped in 1/2 in. pieces
    6 oz. feta cheese
    1 16 oz. bottle Farmer Boy Restaurant Greek Dressing
    12 oz. Ronzoni Rotini Pasta, cooked
    1/2 c. chopped red onion
    1 4 oz. can chopped black olives
    1 pint cherry tomatoes, halved
    3-4 cups chopped fresh baby spinach(I chiffonade mine, but regular chopped is fine, too)

Tips

This recipe can easily be made healthier. Whole-wheat pasta can be substituted, reduced-fat or fat-free feta can be used. There is also a lite version of this dressing. Additionally, you can use a variety of different meats. Summer sausage is what I originally used and what my party-goers usually prefer, although I have also variously used ground lamb or lamb sausage, shredded chicken or even marinated tofu for the in-laws.


Directions

1. Place summer sausage, feta and 1/2 dressing in a 16 oz. ziploc bag. Allow to marinate overnight.
2. Cook pasta according to directions on box. Cool under running water and drain.
3. Combine marinated sausage and feta, pasta and remaining ingredients and mix well.
4. Refrigerate.
