Ingredients

    1 1/2 cups brown rice
    1 medium onion, chopped
    1 tsp. salt
    1 tsp. black pepper
    1 can (10.5 oz.) cream of chicken soup (can also use cream of mushroom)
    2 cans (4 oz.) mushroom slices or pieces & stems, with liquid
    5 bone-in chicken thighs, skin removed
    1/2 cup water

Directions

Spray stoneware insert of slow cooker with cooking spray. Add rice, onion, salt & pepper to stoneware. Toss to combine.
In mixing bowl, stir together soup, mushrooms & mushroom liquid. Pour 1/2 of mixture over rice & onions.
Place chicken thighs over soup mixture. Cover with remaining soup mixture.
Add 1/2 cup water. Cook on low 8 hours.

Serving Size: 1 chicken thigh with 1/5 rice & mushroom mixture
