    1 lb chicken breasts, cut into 1/2" strips
    1 T coconut oil
    2 T almond butter
    1 T curry paste
    2 C coconut milk
    juice of 1 lime


heat oil over medium heat in a large skillet.Once oil is about smoking, add chicken strips and cook fora few minutes on each side. Chicken should not be all the way cooked through. Remove from pan and set aside.

To skillet add nut butter and curry paste, spreading mixture around skillet until aromatic but not burnt. Stir in coconut milk and lime juice, mixing well.

Return chicken to pan and simmer for 5-7 minutes or until cooked through and sauce has reduced somewhat.
