    1 cup of red, orange, and yellow bell peppers, diced
    1/2 of a yellow onion, diced
    2 tsp garlic, diced
    2 cups zucchini, cubed
    1/4 cup spinach, frozen
    one can, artichoke hearts
    2 cups while rice, cooked
    2 tbs tomato paste
    4 tbs extra virgin olive oil
    1 can pettite cut tomatoes
    1 tbs cumin
    1 tsp salt
    1 tsp black pepper
    1 tbs Italian seasoning


heat oil
add onions and garlic, cook until slightly brown
add zucchini, peppers, artichoke hearts, while rice, and tomatoes, cook until tender
add tomato paste
add cumin, salt, pepper, Italian seasoning, and spinach
serve and enjoy!
