Ingredients

    4 oz mushrooms
    2 tbsp water
    1 tbsp margarine polyunsaturated
    4 oz peeled prawns
    2/3 spring onions chopped
    black pepper
    .5 tsp lemon juice
    2 tbsp natural yoghurt
    2 slices wholemeal bread toasted
    watercress to garnish

Directions

cook mushrooms, water and margarine in a small pan with lid on. Uncover and continue to cook unitl liquid is evaporated. Add prawns, onion, pepper and lemon juice, heat through.
Remove from heat and add yoghurt. Serve on toast and garnish.
