They freeze very well and warm up in the Toaster. They freeze very well and warm up in the Toaster.
Number of Servings: 25


    2 cups flour
    1 cup corn meal
    3 tsp Baking Powder
    1-1/2 Tsp. salt
    1 Tbl sugar
    whisk above together well and then in another bowl:

    1/2 cup Vegetable oil
    2 eggs
    1 can evaporated milk
    1-1/2 tsp. Vanilla
    In a 4 cup or larger measuring cup put in the oil and the eggs and mix well until thickened. Add milk, vanilla and water to measure appx, 4 cups total and mix well
    Add to dry ingredients and blend slightly. Let stand while heating waffle iron. Use soup ladle to put batter into waffle iron and follow instructions of manufacturer for time.


Instead of evaporated milk and water, you can use regular milk. The wet mixture should measure approx. 4 cups.
Top with Smucker's Low Sugar Strawberry Preserves for a delicious meal.
