Ingredients

    2 cups, approximately 1 medium zucchini, sliced thin
    1/4 cup Panko bread Crumbs
    1/4 cup grated Parmesan cheese
    1/4 tsp salt
    1/8 tsp fresh black pepper
    1/4 tsp garlic powder

Directions

Line cookie sheet with foil. Spray with cooking spray.
Slice zucchini thinly.
Pour egg substitute in on plate.
Mix dry ingredients together in another plate.
Dip zucchini in egg, then dredge in bread crumb-cheese mixture.
Place in one layer only.
Bake at 450 degrees for approximately 14 minutes, turning halfway through cooking time.

    Incredible!
    These are absolutely delicious! I used 1% milk instead of egg. You also have to make sure that you don't cut them too thin or they will burn. - 4/19/15
