This is a great fresh vegetable salad with a lot of substance. Crammed with super greens and fresh summer vegetables, it makes for a satisfying side dish on a hot day. A full 3-4 servings of veggies! Ingredients

1.5 cup swiss chard - chopped
1.5 cup kale - chopped
1 Medium raw tomato - chopped
1 Yellow summer squash - grated
1 Large red bell pepper - sliced
1 Large avocado - sliced
6 TBSP Alpine Avocado Vinaigrette Salad Dressing
Tips
I like to use organic veggies if they are available and look good.
Directions
Wash and chop the greens.
Pour on ¾ of the salad dressing and mix well.
Wash and chop the tomatoes.
Wash and grate the squash.
Wash and slice the bell pepper.
Scoop and slice the avocado.
Arrange the colorful chopped veggies in a beautiful fashion over the greens and drizzle with the last of the salad dressing.
Serving Size: Makes 2 very large servings
