    Dry Ingredients
    2 1/4 cups flour (whole wheat for half and ground oatmeal for other half)
    2 teaspoons baking powder
    1 teaspoon baking soda
    Wet ingredients
    1 1/2 cups mashed banana
    6 tablespoons apple juice concentrate
    2 tablespoons cooking oil (or unsweetened applesauce)
    2 teaspoons vanilla extract


1Preheat oven to 350.
2Mix dry ingredients together.
3In a medium bowl, mash banana with a fork.
4Add the rest of the wet ingredients with the banana, mix.
5Pour liquid ingredients into the dry ingredients.
6Add nuts or raisins.
7Pour mixture into loaf pan and bake for about 50 minutes.
