Ingredients

1 tbsp veg oil
1 onion, chopped
3 medium carrots, chopped
3 stalks celery, chopped
6-8 medium beets, cubed
2-3 large garlic cloves
1-2 bay leaf
1 tbsp sugar
6-8 cups vegetable broth
1 small cabbage (or half a medium) cut into strips
3 medium size potatoes, diced
1 small can tomato paste
salt and pepper
1/2 cup red wine vinegar
handful of fresh dill
sour cream for accompaniment
Directions
1. Heat oil, saute onion, carrots, celery and beets
2. Stir in garlic, bay leaf, and sugar and cook for 2 minutes. Add tomato paste, cook 2 more minutes. Add cabbage and potatoes, then cover with broth, add salt and pepper.
3. Simmer, covered, until vegetables are tender, about 20-30 minutes.
4. Add chopped dill, vinegar.
5. Eat warm, or cool/chill. Serve with sour cream and a sprinkle of fresh dill.
