Ingredients

    2 Tbs Extra Virgin Olive Oil
    1 tsp each: rosemary, coriander, marjoram, oregano, sage, basil and thyme OR 2 Tbs Italian spice blend
    3 cloves Garlic
    1 medium Onion, chopped
    1 cup sliced carrot
    1 cup diced celery
    1 cup diced potato (1 med potato)
    4 cups vegetable broth
    6 oz Grated Parmesan
    28 oz diced tomato
    4.5 cup cannelloni beans (3 cans, drained and rinsed)

Tips

If you like these spices, you can also try a pre-mixed spice blend, like Kirkland's.


Directions

Heat olive oil in a large heavy bottom stock pot.
add spices and 1/2 cup broth and simmer 1 minute.
Add onions, carrots, potato and celery; sauté 5 minutes.
Stir in the tomatoes, beans and remaining broth.
Cover and continue cooking 1 hour.
Sprinkle 1 tablespoon grated cheese over the top of each serving.

Serving Size: makes six 2-cup servings

    This looks delicious! I've been looking for a good Tuscan soup with turkey sausage and tried it tonight. Delish! - 2/20/16
