Ingredients

    1 slice ham or other meat (recipe says ham, but I actually use turkey or chicken)
    1 tsp diced tomatoes (calculations in recipe are probably slightly more tthan 1 tsp)
    1/4 cup low fat shredded cheddar cheese
    1 Egg

Tips

This recipe is for just one, but obviously you can fill up the muffin tin with as many as you like. Great make ahead breakfast, or brunch item.


Directions

1. Spray muffin well of a mufin tin with nonstick spray.
2. Place a slice of ham (or other meat) in the bottom of each muffin well.
3. Place about a teaspoon or so of diced tomatoes on top of the ham.
4. Sprinkle shredded cheddar cheese over the tomatoes.
5. Break on egg on top of the other ingredients.
6. Sprinkle with salt and pepper to taste.
7. Bakte at 350 degrees for 18-20 minutes or until the yolks are as firas you desire and whites are cooked through.
