Introduction

My attempt to make completely sugar free and carb free Iowa ham balls. My attempt to make completely sugar free and carb free Iowa ham balls.

Ingredients

    1 pound ham loaf : ground ham with some pork added to it
    3 eggs
    2 tablespoons flax meal
    .25 cup almond flour
    cumin
    turmeric
    salt and pepper to taste

Tips

I used a small table top convection oven and they were done in 25 minutes
I blended some fresh pineapple and added to some of the balls
To be more authentic they need to have some sort of crackers usually graham crackers in them and some barbecue sauce, since I was aiming to avoid carbs, I did not do either of those things. Almost every brand of barbecue sauce has HFCS


Directions

mix the eggs, flax meal and flour together
add in the ground ham mixture
season to taste

make into small balls and place into a greased 9 x 13 pan
bake at 350 f for 30 minutes or until internal temp is 160 f.
