Ingredients

    6 boneless, skinless chicken tenderloins
    1 15oz can Del Monte Petite Cut Diced Tomatoes
    1 15oz can tomato sauce
    1 15oz can black beans
    1 cup frozen peas & carrots
    2 Tbsp chopped onions
    1 tsp chili powder
    1/8 tsp ground cumin
    1/8 tsp ground turmeric
    Add to taste - fajita seasoning, garlic powder
    Olive oil

Tips

I served this dish over rice (not included in nutritional information)


Directions

Brown chicken tenders in heated olive oil. Drain excess oil. Add all remaining ingredients to skillet & stir to mix. Cover and simmer over medium-low heat for 20-25 minutes, until chicken is cooked through and vegetables are tender.
