Ingredients

16 oz. Boneless, Skinless Chicken Breast
1 Tbsp. Butter
1 Tbsp. Olive Oil
1 jar Good quality marinara sauce
4 oz. Mozzarella Cheese
8 oz. Whole Wheat Pasta (measured dry)
1 c. Onion, chopped
1 tsp. Minced garlic
1 15oz. Can Petite Diced Tomatoes
1 15oz. Can Tomato Sauce
2 tsp. Dried Basil
2 tsp. Sugar
1 Tsp. Dried Oregano
1/4 tsp. Crushed Red Pepper Flakes
Tips
Serve the pasta, topped with 1/4 the sauce and 1 piece of chicken.
Directions
Cut the chicken breasts into 4 oz. pieces. Start the pasta water.
Heat skillet to medium high, add olive oil and butter. Brown chicken breasts on both sides and remove to plate. In the pan, add the onion and sauté until tender (2-3 minutes), add the garlic, and sauté another minute. Pour in the diced tomatoes and tomato sauce. Add the sugar, oregano, basil and crushed red pepper. Bring to a boil, add chicken breasts back to the pan, cover and reduce to a simmer for 10 minutes.
When water is boiling, add pasta and cook according to package instructions.
Top each chicken piece with 1 oz. mozzarella cheese, cover and simmer another 5 minutes, or until cheese is melted.
