Ingredients

    1 lb ground beef
    2 medium zucchini
    1 medium onion
    1 can green beans
    1 can diced tomatoes
    2 tbsp pumpkin puree
    3 red bell peppers
    3 cloves garlic
    5 leaves basil
    salt and pepper

Tips

Cover and bake at 400 degrees for 40 minutes. Uncover and continue baking for 10-20 minutes.


Directions

Brown the beef with the diced onion and garlic. Add tomatoes, pumpkin and basil. Mix in diced zucchini and green beans. Cook until zucchini is tender. Stuff halved bell peppers and top with cheese.
