Ingredients

1 pound extra lean ground beef
1 can (28 ounces) stewed tomatoes
1 can (14 ounces) beef broth, low sodium
½ medium head cabbage, shredded
1 large onion, chopped
3 celery ribs, chopped
2 carrots, chopped
1 tsp. minced garlic
½ Cup Brown Rice (Soak dry rice in cold water 3 hrs. drain)
2 tsp. au jus base
3 cups water
Pepper to taste
Tips
Makes 10 generous servings. I prefer the texture of brown rice after it's been soaked, but this is just a personal preference. I'm sure you could soak the rice overnight and then add with the rest of the ingredients, in a slow cooker, in the morning. Also, homemade beef stock could reduce the sodium.
Directions
Soak rice in cold water at least 3 hours; drain.
In a large soup pot, cook beef over medium heat until no longer pink; drain.
Add the onions, carrots, celery and garlic and cook 10-15 minutes.
Add cabbage, tomatoes, broth and rice; bring to a boil.
Mix 2 tsp. au jus base with water. Add to soup until desired consistency.
Reduce heat; simmer, covered, for about 2 hours or until vegetables and rice are tender. Stir in pepper.
