Introduction

Ingredients

    6 ears of sweet corn, off the cob
    3 slices of thick cut bacon
    1 spicy pepper if you choose
    1 quart of reduced chicken broth
    1 1/2 cups of fat free half and half (that's what I had)
    1 small can of green chillies
    1 whole yellow onion
    1/4 cup of corn meal
    3 tbsp. of water

Tips

You might want to reduce the chicken broth a little if you are using fat free half and half. You can also use heavy cream, too.


Directions

Chop the bacon into 1" pieces or thinner if you prefer. Begin cooking over medium heat in a big pot until the fat starts to render. Add the finely chopped onion and cook until translucent. Add the spicy pepper if you want. Then add the corn, let this cook for a few minutes. Add the chicken broth, then the half and half. Mix until all incorporated. Reduce to simmer and let simmer for about 1/2 hour. At this time, add the cornmeal mixture to help thicken. Serve warm and enjoy with corn tortillas (nutrition facts not listed for the shells)
