Introduction

Ingredients

1 chicken breast, boneless, skinless, cut in 1 inch chunks
1 crown of fresh broccoli
1 packet of Cheddar Broccoli Rice & Sauce
1 Tbsp Olive Oil
2 cups water
1 Tbsp butter
Directions
- Cut up chicken breast.
- Heat 1 Tbsp olive oil in high side pan on medium heat. Add chicken. Cook a few minutes. It will not be done when you go to the next step.
- Add 1 Tbsp butter to pan, melt a few seconds.
- Add rice from packet to pan. Saute a minute or so, then add the water per package directions (approx 2 cups depending on which brand packet you use).
- Bring to boil over medium high heat. Reduce heat to simmer, cover. Cook about 3 minutes or so.
- Stir. Add broccoli. Stir in and recover.
- Continue to cook and stir occasionally until done. Rice will have absorbed most of water, chicken will be cooked, and broccoli will be softened to your liking.
Serving Size: Makes 3 approx 1.5 cup servings
