Ingredients

    2-lbs. pattypan squash
    1/4-cup olive oil
    1/2-cup fresh grated Romano cheese
    1/3-cup Italian seasoned breadcrumbs
    1/2-tsp coarse salt
    1/4-tsp black pepper

You may need to broil to melt cheese?


Directions

Preheat the oven to 350F. Remove the stem ends and slice the squash cross-wise in 1/4 inch slices. Toss with olive oil.In a small bowl combine the bread crumbs,Romano,salt and pepper.Arrange the squash rounds in a 9 x12-inch rectangular baking dish.Sprinkle with bread crumb mixture on top.Cover baking dish with foil and bake in oven for 30 minutes. Remove foil and return to oven for five minutes or until the top is bubbly and crispy.
