    1/2 cup egg whites
    1/4 egg yolk
    5 Asparagus spears, chopped
    1 cup Mushrooms, sliced
    1 oz Goat Cheese


In a small bowl beat together egg whites and yolk. Pour mixture into small skillet sprayed with Pam. Cook on med heat for 3-5 min or until almost set, flip cook an additional 30 seconds. Remove omelette to plate sprinkle with cheese, set aside.
In same pan add mushrooms & asparagus. Cook for 2-3 min until veggies are tender crisp. Place half of veggies inside omelette, fold in half. top with remaining veggies.
