Introduction

Ingredients

    Sauce:
    3/4 c. low sodium chicken broth
    8 T soy sauce
    4 T white sugar
    4 T white vinegar
    2 t cayenne pepper
    4 T cornstarch

    Stir-fry:
    2 T Canola or vegetable oil
    3 # boneless, skinless chicken breast (or thighs) cut in 3/4 inch pieces
    4 cloves minced garlic
    2 large red bell pepper, cut in 3/4 inch pieces
    1 C dry roasted peanuts
    2 green onions, sliced

Directions

Whisk all sauce ingredients in a bowl until smooth, set aside.
Head oil in large skillet or wok over med-high heat; saute chicken and garlic until chicken is no longer pink in the center, about 10 min. Add red bell pepper and saute until slightly tender, about 10 min.

Stir sauce into chicken into chicken mixture and cook until thickened, about 3 min. Stir in peanuts and garnish with green onion.

Serving Size: Makes 20 servings
