Introduction

Ingredients

    2 English Cucumbers, diced
    4 Roma Tomatoes, diced
    1 can Large Black Olives, quartered
    5.6 oz feta cheese, crumbled
    2 15 oz. cans chick peas, drained and rinsed
    2 tbsp Balsamic vinegar
    2 tbsp lemon juice
    1.5 tbsp olive oil
    1/2 tsp pepper
    1/2 tsp oregano
    1/4 tsp basil

Tips

I like mine very acidic, so adjusting the lemon juice & balsamic vinegar to taste may be needed. For a side dish, could easily divide a serving in half or thirds.


Directions

Combine in a bowl, divide into individual servings. Store extras in the refrigerator.
