    2 Tbsp olive oil
    1 med onion, chopped fine
    1 med carrot, chopped fine
    1 stalk celery, chopped fine
    1/2 cup chopped mushrooms
    3 cloves garlic, chopped
    1/2 tsp dried oregano
    3/4 cup Grape Nuts cereal
    14.5 oz can diced or stewed tomatoes
    8 oz can tomato sauce
    1/2 to 3/4 cup water
    salt and pepper


Heat olive oil in a large skillet over med-high heat. Add the chopped vegetables and cook until all are soft (about 10 mins). Add garlic, cook for 1 min. Add the Grape Nuts cereal, tomatoes, tomato sauce and 1/2 cup water. Bring to a boil; reduce heat and simmer for 5 to 10 mins, adding water to desired consistency. Add salt and pepper to taste.
Serve over cooked pasta.
Makes 4, 1-cup servings.
