Introduction

This is a hearty veggie quiche. I needed a healthy dish to take to a friend, so after looking at a zucchini crustless quiche, I decided to use the fresh veggies I had on hand to make my own version. I made it in a deep dish pan, and this was enough for the deep dish, but it was too thick for my liking, so I spread it out to a smaller pie pan, making 10 servings. I did have to make a little more or the egg mix for the second pan. (1/4 c. flour, 1/3 c milk, 2 eggs, 1/2 tbsp oil, salt, pepper). I put a small dallop of fat free sour cream on the top of mine. Ingredients

    3 small Squash - Yellow and Zucchini, grated
    1/2 cup Onion, chopped
    1 cup Green Bell Pepper, chopped
    1 cup Sweet Corn, fresh or frozen
    4 tbsp Hormel Bacon Bits
    1 tbsp Onion powder
    1 tsp Pepper, red or cayenne
    8 oz Mozzarella Cheese
    1/2 c. flour
    2/3 cup Milk, nonfat
    1 Tbsp Extra Light Olive Oil
    3 Eggs
    1 tsp Salt
    1 tsp Fresh Cracked Black Pepper
    *100% Extra Virgin Olive Oil Cooking Spray

Directions

Preheat oven to 400. LIghtly spray pan with cooking spray.
Place first 8 ingredients in a bowl and mix well.

Mix together flour, milk, oil, eggs, salt, pepper. Blend well. Mix with veggie blend.

Pour into the pie dish (es) and bake for about 45 minutes or until a knife comes out clean. Allow to reast at least 5 minutes before serving.

Serving Size: 8-10 slices
