Ingredients

The qtys I put for rice are uncooked.
Lawry's Seasoning is used instead of the salt for the sauteing the chicken.
Red Ripe Tomatoes, 25 large whole (3" dia)
Wild Rice, 1 cup, uncooked
*Brown Rice, long grain, 1 cup uncooked
Chicken Breast, with skin, 3 breast, bone removed (remove)

Bush's, Black Beans, 1.5 cup (remove)
*White Onion, Raw (1/2 cup), 2 cup (remove)
Garlic, 5 clove (remove)
Grapeseed Oil, 2 1tsp (remove)
Salt, 1 tsp (remove)
Tips
Great as leftovers. Sodium could be reduced further by cooking dried black beans.
Directions
Take a big pot and cook down fresh tomatoes. Should be about 2 quarts when done. Add more tomatoes and continue to cook.
Cut the chicken into medallions. In a separate pan, saute it onion and garlic in grapeseed oil with the Lawry's until the outside is browned.
While the Chicken is cooking. Add Black Wild Rice and cook for 1/2 hour. Add Brown rice and a can of Black Beans. Cook for another 1/2 hour.
