    6 eggs
    1/4 cup light mayonnaise
    1 Tbs. dijon mustard
    1/2 tsp. curry powder
    1/4 tsp. garlic powder
    1/4 tsp. salt
    1/8 tsp. white pepper
    1 strip vegetarian "bacon" (Morningstar Farms)


1. Boil eggs for 20 minutes, then rinse in cold water.
2. Once cooled, peel eggs and slice in half lengthwise. Remove yolks and mash in a small mixing bowl.
3. Fry vegetarian "bacon" according to package. Crumble and set aside.
4. In a seperate bowl, combine mayonnaise, mustard, curry powder, garlic powder, salt and pepper. Mix well.
5. Add mashed egg yolks to mayonnaise mixture and combine well. Stir in crumbled "bacon."
6. Stuff a teaspoonful of egg mixture into each egg white half. Cover and chill at least 30 minutes before serving.
