    1 TBSP olive oil
    4 cloves of garlic (minced)
    1 medium onion (sliced)
    2 carrot sticks (peeled and sliced)
    2 celery stalks (sliced)
    1 stalk of broccoli (head should be size of hand and chopped without stalk)
    2 zucchini (sliced)
    4 medium tomatoes - vine grown (sliced with seeds)
    1 Cup greens - swiss chard or kale - chopped without stems
    Water - as needed
    2 cubes of vegan vegetable bouillon.


Serving size: 4 LARGE bowls of soup

If you have a wok or a large rounded pan (size of a wok) heat OLIVE OIL over medium heat. Once heated add GARLIC and ONION and cover with a lid for 3 minutes. Lid may not fit, but that's fine, we just need to create some steam and lid can touch vegetables when it gets to that point! Add CARROTS, CELERY, and stir. Also add a 1/4 inch of water to pan to create more steam, turn heat to medium high and cover with lid for 3 minutes. Add BROCCOLI, ZUCCHINI, and TOMATOES, stir and cover for about 5 minutes. Stir again and cover for another 5 minutes or until tomatoes are disintegrates. Now add GREENS, stir, cover and let them get soft - a few minutes. In the water created from the veggies add 2 cubes of BOUILLON, stir around the area you put into and let it disintegrate. Add 4 Cups of water (or directions of cubes) and stir. Let soup heat for 5 minutes and stir from time to time. You can eat soup as is, or I prefer to put it into a food processor so it's liquidated. Makes a hefty bowl of soup and is about 125 calories per serving. Can be refrigerated for 3-4 days! I eat this as my lunch everyday. ENJOY!
