Ingredients

    2C-pattypan squash or zucchini
    2-tbsp extra virgin olive oil
    1-tsp salt
    1/4-tsp pepper
    2-tsp Italian seasoning
    1/4C-fresh grated Romano cheese

Tips

For the olive oil I used garlic infused olive oil


Directions

Cut end off of patty-pan squash and cut in half lengthwise.Remove the seeds and cut into equal bite size pieces. Put in a glass baking dish and drizzle with the olive oil.Stir to coat.Sprinkle with the remaining ingredients and bake in a 350F oven for thirty minutes.
