    1 cup chopped onion
    4 tbsp margarine
    4 tbsp flour
    6 cups milk
    1 cup chopped celery
    2 tsp salt
    1/2 tsp black pepper
    4 cups diced potatoes


Sautee onions in margarine. Add flour and stir to make a rue. Add about 2 cups of milk and stir constantly until thickened. Add the rest of the milk. Add celery, salt, pepper, and potatoes. Simmer for 30 minutes (do no boil) or until potatoes and celery are tender. Top with cheese or bacon if desired.
