Number of Servings: 16

Ingredients

    1-3/4 C Whole Wheat Flour
    3/4 C Sugar
    1 tsp Baking Powder
    1 tsp Baking Soda
    1/2 tsp Salt
    1 Egg
    1/2 C Vegetable Oil
    1/2 C Yogurt, plain, fat-free
    1 tsp Vanilla Extract
    1 tsp Cinnamon
    1 mashed ripe banana (1/2 cup)
    1/2 C Applesauce, unsweetened
    3/4 C chocolate chips, semi-sweet, regular or mini morsels (optional)


Directions

Makes 12 large or 16 medium muffins.

In a large bowl, combine the flour, sugar, baking powder, baking soda, cinnamon, and salt.

In another bowl, combine the egg, oil, yogurt and vanilla. Stir into dry ingredients just until moistened. Fold in banana and applesauce (and optional chocolate chips).

Fill greased or paper-lined muffin cups two-thirds full. Bake at 350 degrees F for 22-25 minutes or until a toothpick comes out clean.

Cool for 5 minutes before removing from pans to wire racks.
