Introduction

This is an easy, delicious way to use up produce that is in danger of going bad. This is an easy, delicious way to use up produce that is in danger of going bad.
Number of Servings: 4

Ingredients

    1 large yellow crookneck squash, sliced
    1 cup of sliced sweet peppers (red, green, yellow, orange)
    5 oz. baby bella mushrooms, sliced
    1-2 peeled carrots, cut into sticks
    1/4 cup sliced red onion
    1/8 tsp. sea salt
    1/8 tsp. black pepper
    1/2 tsp. dried oregano
    2 Tblsp. olive oil

Directions

Put all vegetables in a large bowl. Sprinkle with olive oil and seasonings; toss to coat.

Spray a cooking pan with raised sides with nonstick spray. Pour vegetables into pan and spread out.

Roast at 400 degrees F for 30 minutes. Every 10 minutes, stir vegetables and spread out again.

Serving Size: Makes 4 1-cup servings
