Ingredients

6 oz uncooked pasta
12 oz chicken breast, raw, chopped into 1/2" pieces
1 cup chopped carrots
1 small onion chopped
1 cup chopped celery
1 tbsp mixed fresh herbs to taste (rosemary, thyme, sage, basil)
1 tsp salt
2 tsp Caribbean spice (or other spice mix)
1 tbsp olive oil or coconut oil
3-4 garlic cloves, minced
2 cups chicken stock
Tips
You can mix up the vegetables, meat and spices in this dish to match your tastes. Depending on how much sauce you like in your dish, you can leave the pot on the stove for a few more minutes to evaporate out all the water once the pasta is cooked.
Directions
- Saute the onions, garlic and celery until the onions are soft.
- Add in chopped chicken, and cook until chicken is mostly cooked through. (if you like well done carrots, add them in now too)
- add all other ingredients
- add water if needed to cover the pasta
- bring to a boil
- simmer the pasta uncovered for 6-9 minutes, until pasta is cooked to your taste. Add more water if needed - pasta should remain barely covered.
Serving Size: Makes 4 1-1/2 cup servings

- bring to a boil
