This is a recipe I used to make about once a week, then I lost it, and recently found it again. I am sharing to keep it around because it is the best easy vegetarian chili I have ever tasted. Number of Servings: 2

Ingredients

    1 can kidney beans
    1 can diced tomatoes
    1/2 small onion (diced)
    2 cloves of garlic (diced)
    1/4 cup of vinegar
    1 tablespoon of molasses
    1/2 cup jarred banana pepper (diced)
    1 heaping teaspoon chili powder
    1/4 teaspoon red pepper
    salt & pepper (to taste)

Directions

Mix everything together, bring it to a boil, reduce heat and simmer for about 45 minutes, stirring occasionally.

Serving Size: Makes 2 big bowls of chili
