Introduction

A vegan version of gumbo. Yum! A vegan version of gumbo. Yum!
Number of Servings: 8

Ingredients

    *Flour, white, .25 cup
    Onions, raw, 1 cup, chopped
    *Nature’s Greens, Collard Greens, 3 Cups, 1.5 serving
    Cream substitute, liquid, with hydrogenated vegetable oil and soy protein, .125 cup
    *Crisco Pure Vegetable Oil, 1 tbsp
    1 Med. Green Bell Pepper, 1 serving
    Celery, raw, 1 stalk, large (11"-12" long)
    Canned Tomatoes, 1 cup (
    Hot Pepper Sauce, 1/4 cup
    *cayenne pepper, 1 tsp
    Thyme, ground, .5 tsp
    Oregano, ground, .5 tsp
    Basil, 1/2 tsp
    Parsley, dried, 1 tsp
    Garlic, 3 clove
    *Veggie Stock (2cans)
    Salt, 1 dash (
    Pepper, black, 1 dash
    *Okra, frozen, cooked, .5 package (10 oz) yields
    *Beans, Kidney beans dark red 1 can

Tips

Sriracha hot sauce works but if you use it, don't add 1/4. Add a little at a time by taste.


Directions

Cut up greens. Add greens and enough water to cover. Boil for 15 minutes. Remove greens and put aside in bowl. Reserve 2 cups of the water.
In large saucepan. whisk 1/4 cup oil and flour together to make roux. Stir constantly for about 12-15 minutes until roux is dark brown. Add onion, green pepper celery and tomatoes. Cook for 10 minutes or until wilted. Add hot sauce, cayenne. thyme, oregano, basil, parsley, and garlic and cook for 5 more minutes. Add stock and reserved greens water and beans. Bring to a boil add salt and pepper. Reduce heat and simmer for 15 minutes. Add okra and cook for 5 minutes.Taste for seasoning. Serve with rice if desired.
