Introduction

A delectible chicken strip{finger}. It is best to marinate the chicken for at least 24 hours, but definatly no less than 30 minutes. Serve with veggies and brown rice for a great meal.

These are very fragrant. At first bite you get the garlic. Then as you chew you get the mint and a back note of the lime.

Number of Servings: 2

Ingredients

    1 lb. boneless, skinless chicken breasts; cut into strips
    1/4 c. lime juice
    2 cloves garlic, minced
    2 Tbs. fresh mint, chopped
    2 Tbs. EVOO

Directions

Using a cast iron grill pan, spray with cooking spray. I used Pam Grilling Spray. Place chicken strips in pan, leaving some space between to cook evenly. I did this twice because I had so much chicken it would not all fit.

Place in a 350 degree oven and cook for 10 to 15 minutes, then turn once. Cook another 8 to ten minutes. Repeat till all strips are cooked. Cut the fatest strips to be sure they are fully cooked.
