Pork Carnitas Crockpot-style! Pork Carnitas Crockpot-style!
Number of Servings: 8

Ingredients

    Pork, fresh, loin, tenderloin, 16 oz
    Campbell's Beef Consomme, 0.5 cup
    Bush's Black Beans REDUCED SODIUM 1/2 cup - 1 serving, 3 servings - *RINSE AND DRAIN*
    Glory Foods LOW SODIUM Pinto Beans 1/2 cup = 1 serving, 3 servings - *RINSE AND DRAIN*
    Rotel ORIGINAL Diced Tomatoes & Green Chilies 1/2 cup = 1 serving, 2.5 servings - *DRAIN*

Tips

May also add one can sweet corn and a seeded, diced jalapeno for extra heat.
Be sure to drain and rinse the beans and that will greatly lower the sodium per serving.


Directions

Place Pork Loin in crockpot with 1/2 cup beef consomme. Allow to cook on HIGH for three hours.
Drain Rotel Tomatoes & Chilies, add to crockpot.
RINSE and DRAIN Pinto and Black Beans (This will lower the sodium as well).
Allow to cook on HIGH for about 2 more hours until pork can be shredded easily with a fork.
Serve with tortillas or rice.
