Ingredients

    Cauliflower, raw, 1 head, large (6-7" dia)
    Butter, salted, 3 tbsp
    Leeks, 1 cup chopped
    Garlic, 1 clove
    Heavy Whipping Cream, 2 tbsp
    Parmesan Cheese, grated, 2 tbsp

Tips

This is great with any meat or all by itself. Satisfying and tasty.


Directions

1.Remove the leaves and core from the cauliflower and break it into pieces that will fit in a 4 Qt sauce pan.
2.Cut the green top and roots from the leeks and cut them into 2" pieces.
3.Remove skin from garlic
4.Steam or boil all together in about 2 qts of water.
5.Drain
6.Put in food processor and blend together with butter, cream, parmesan, and seasonings to taste. (I like nutmeg) until the consistency you like for mashed potatoes.
