    3 Medium, ripened bananas (about 1.5 cups)
    1/2 tsp Pure vanilla extract
    1 large egg
    3 Tbsp coconut oil, melted
    1/4 cup honey
    1/4 cup molasses
    1/2 cup Milk
    1 1/2 Tbsp Baking Powder
    1/2 tsp sea salt
    1/2 tsp ground cinnamon
    1 1/4 cup almond flour
    1 1/4 cup gluten free flour mix
    1 1/4 cup thick rolled oats


With a few substitutions this could be made into a vegan recipe.

Can substitute coconut oil for butter, or oil of choice.

Can be frozen for long term storage.


Preheat oven to 340

In one bowl mix dry ingredients and set aside.

In another bowl, blend egg, banana, milk, vanilla, and melted coconut oil. Add honey and molasses. Slowly add dry ingredient mix.

When all ingredients are mixed in, scoop into muffin cups.

Bake for about 40 minutes. Let cool completely before removing from cups.
