Introduction

Ingredients

    1 1/2 cup soy milk
    1 1/2 T cider vinegar
    1 cup cornmeal
    1 cup AP flour
    2 T sugar
    1/2 t salt
    1 t baking powder
    1/2 t baking soda
    3 T canola oil, divided
    1 T Blue Bonnet lite margarine (vegan)

Directions

Preheat oven to 425 degrees.
Add one tablespoon of oil and the margarine to a cast iron skillet and put in preheated oven for 5 minutes to melt.

Meanwhile, mix soy milk, vinegar and remaining two tablespoons of oil together and set aside.

Mix dry ingredients.

Whisk wet and dry ingredients and add to heated skillet, return to oven and cook for 30 minutes.

Serving Size: makes 8 pieces
