Number of Servings: 10


    1 tbsp olive oil
    4 boneless, skinless chicken breast halves, chopped.
    2 medium white onions, finely diced
    4 cloves garlic, minced
    3 cans low sodium chicken broth
    2 4 oz. cans diced green chiles
    2 tsp. ground cumin
    2 tsp ground oregano
    1.5 tsp cayenne pepper
    5 14.5 oz cans great Northern beans, undrained
    2 tbsp chili powder
    2 12 oz. cans white corn


Heat the oil in a large pot over medium heat. Add the onions and garlic and saute for 10 minutes, or until onions are tender. Add the chicken, chicken broth, white corn, green chile peppers, cumin, oregano, chili powder, and cayenne pepper and bring to a boil.

Reduce heat to low and add the beans. Simmer for 30 to 45 minutes, or until heated thoroughly.

Makes 10 1-cup servings.
