Ingredients

    8 boneless skinless chicken Thigh
    1.5 packages Kroger Three Pepper and Onion Blend, Frozen (about 5 cups)
    3 Tbsp. lemon juice
    1 14.5 ounce can Tomatoes - Glen Muir ADOBO organic fire roasted (about 1.5 cups)
    2 cups chicken bone broth homemade
    2 slices Pederson's Uncured Hickory Smoked Bacon, diced
    2 Tbsp. Kerrygold Irish Butter
    5 Tbsp. Coconut Oil
    4 cloves garlic, minced
    2 Tbsp. Thyme
    2 Tsp. cumin (could use more)
    2 tsp. black pepper
    2 tsp. salt

Tips

Good topped with cheese and sour cream.


Directions

Put butter slices on bottom of crockpot. Pour pepper blend next. Place chicken thighs over better. Sprinkle with diced bacon, adding coconut oil here. Cover with mixed spices. Mixed lemon juice, bone broth, & undrained tomatoes; pour over chicken.
Cook on low about 6 hours.
Shred chicken with fork and stir well before serving in bowls.
