    3 lb fresh eggplant, peeled and sliced round
    1 large white onion, sliced
    2 lbs. fresh zucchini, sliced lengthwise
    1 lb., yellow squash, sliced lengthwise
    16 oz. mushroom sliced pieces
    1 large (4 lb 3 oz) jar Prego Fresh Mushroom sauce
    1 pack Kraft deli slice Aged Swiss, 16 thin slices.


1. slice the vegetables. And grill them. I used a George Foreman Grill.
2. In a 13 X 9 in casserole dish, spray with nonstick spray.
3. Pour about 1/3 of the tomato sauce to line the bottom of the dish.
4. Layer the vegetables: eggplant, zucchini & squash, onions, mushrooms, cheese, tomato sauce again, eggplant, zucchini& squash, mushrooms, tomato sauce & cheese

5. Bake in oven at 400 degrees for 30 min

Let sit for about 15 min.

Makes 12 (1 cup) servings.
