    4- 4 oz. frozen boneless chicken breasts
    1- 15 oz. can mandarin oranges in juice
    2- tsp spice world minced garlic
    1/4-tsp ground black pepper
    1/2-tsp table salt
    1-tsp McCormick rotisserie chicken spice
    2-tbsp lite soy sauce
    1-small red pepper(coarse diced)
    1-small yellow pepper(coarse diced)
    1-small orange pepper(coarse diced)
    1- jar(12 oz.) Smuckers sugar free marmalade
    1-bag(16 oz.) Bolthouse carrot chips
    2-tbsp cornstarch
    2-tbsp water
    1-small red onion (coarse diced)
    2- cup cooked brown minute rice


Add the marmalade,mandarin oranges with all the juice,garlic,pepper,salt,McCormick chicken spice,lite soy sauce, to the pressure cooker pot and stir to mix well. Next add all the vegetables and stir once more.Nestle the frozen chicken breast into the vegetable mix.Place lid on pressure cooker and set timer 35 minutes.After 35 minutes release pressure from pressure cooker and remove lid when safe.mix together cornstarch with water to form a thick paste and stir into pot and cook until it thickens you can add more cornstarch if it is not thick enough.Prepare rice as per package instructions and serve with the chicken and sauce over it.
