Ingredients

    1 tablespoon olive oil
    1 tablespoon mixed herbs (thyme, rosemary, sage, and parsley
    1 teaspoon sea salt, divided
    1/2 teaspoon black pepper, divided
    2 boneless, skinless chicken breasts
    6 cloves garlic, peeled
    1/2 large onion, peeled and sliced
    1 1/2 cups low-sodium vegetable broth
    2 oz. dry white wine
    1 tablespoon unsalted butter

Directions

Heat oven to 350 degrees. In bowl, combine olive oil, herbs, half of the salt, and half of the pepper. Rub chicken with oil mixture. Place in baking dish or roasting pan. Place garlic cloves, onions, and 3/4 cup of vegetable broth in pan with chicken. Cover and roast 30 minutes.

Transfer chicken to plate and cover lightly. Skim and discard any visible fat from pan juices. Place pan over 2 burners on stove-top over medium heat. Add wine, remaining broth, and butter. Bring to a boil, stirring up any brown bits from pan. Using fork, mash garlic and onion into sauce. Let simmer 5 minutes. Season with salt and pepper. Serve over sliced chicken breasts.
