Number of Servings: 4


    4 large flour tortilla shells
    Cooking Spray
    8oz of ground turkey meat 93/7
    1 package taco seasoning
    1 1/2 cups water
    1 onion
    2 cups shredded lettuce
    1 large tomato diced
    1 cup fat free cheddar (or other fat free cheese)
    1 can fat free refried beans
    8 tbs salsa
    8 tbs light sour cream (or fat free if you wish)
    2 jalapenos (optional)
    4 jumbo black olives (optional)


**pre-heat oven to 350**

Take a glass or metal bowl and spray with cooking spray. Take large tortilla and spray both sides with cooking spray and season with salt and pepper or other spice if you like (taco seasoning works well and gives it a kick). Place inside bowl so that the tortilla forms the shape of a bowl. Bake in oven for approx 15 minutes or until shell becomes firm.

1. In skillet, brown turkeymeat and drain grease.
2. Mix in water and taco seasoning (you can add more taco seasoning if you like it spicier) and onion and simmer, uncovered, until you have desired consistency.
3. Heat refried beans either in a pot or in the microwave.
4. Take a tortilla shell and place on plate. put some refried beans in bottom and then the meat mixture. Next add cheese (unless you would rather have that on top). Top with lettuce, tomato, jalapeno, olives, salsa and sour cream. Then serve. **serves 4**
