    2/3 cup all-purpose whole wheat flour
    1/3 cup yellow cornmeal
    1/3 cup sugar
    1/4 cup corn flour
    2.5 teaspoons baking powder
    1/4 teaspoon salt
    2/3 cup whole, low-fat, or fat-free milk
    2.5 tablespoons unsalted butter, melted
    1 egg, any size


Preheat oven to 350 degrees. Grease or spray an 8 x 8 square pan or a cast iron skillet (let greased skillet heat in oven as it preheats).

Combine dry ingredients in a bowl and mix well. Measure milk into a 2-cup measure. Add egg and whisk. Pour in melted and cooled butter while whisking. Pour wet ingredients into dry and stir just until well combined.

Pour batter into prepared pan of choice and set timer for 35 minutes. Test for doneness and check every couple of minutes thereafter until done. Serve hot. Makes 8 squares or 8 pie slices.
